I try to cram in at least 3 portions of vegetables a day (ideally more). I have allergic constraints (fish, seafood, beet/cane sugar) and also avoid several ingredients that I just don't care for.
I don't worry about cholesterol or sodium, because I believe in worrying about the problems you have, not the ones family history suggests you're unlikely to develop.
If your restrictions are different, I wish you luck with adapting the recipes, and am of course interested if you want to post the results, but please don't expect me to offer advice. I really only know how to adapt food to my own diet, and the diets of people close to me.
